Roasted Tomatillo Salsa Verde
1. Preheat oven to 400 degrees
2. Slice in half (vertically) the tomatillos, roma tomatoes, jalapenos (remove seeds for a more mild salsa) and place on a rimmed baking sheet
3. Peel and quarter a red onion, add 1-2 quarters to baking sheet
4. Peel and smash 1-3 garlic cloves, add to baking sheet
5. Drizzle olive oil and sprinkle kosher salt over veg
6. Roast for 20-30 minutes (checking after 20 minutes, then every 5)
7. Cool veg
8. Transfer veg to food processor. Zest two limes into food processor and the juice of 2-3 limes. Add the tops of a cilantro bunch
10. Pulse 10-20x. Check texture. Taste. Add salt or more lime juice to taste.
Flour Tortillas
2 cups (260 grams) all-purpose flour
1 tsp fine sea salt
2/3 cup very warm water
5 tablespoons neutral flavored oil
1. To make the dough, add the salt to the warm water and stir until the salt has dissolved
2. In a large bowl, use a pastry cutter, or fork to combine the flour with the oil. It should look crumbly.
3. Pour in almost all of the salty water and stir until shaggy dough forms.
4. When the mixture comes together, transfer to work surface and knead until smooth (2-3 min)
5. Cover with a clean dish cloth and rest for at least 15 minutes.
6. Divide the dough into 10-12 equally sized blobs and then shape into balls
7. Using your tortilla press, press each ball, twice. You may then need to roll out the tortilla to be thinner with a rolling pin
8. Stack the tortillas with a piece of parchment paper between them.
9. Cook the tortillas over medium-high heat on a heavy bottomed skillet. Pre-heat the skillet
10. Add a tortilla to the hot pan
11. Within 20-30 seconds you should start to see if puffing up with bubbles forming
12. When the tortilla has brown spots, flip it and cook the second side. Each tortilla will take 1 to 2 minutes to cook
13. Transfer tortilla to a clean dish towel and cover, continue to cook the remaining tortillas.
Corn Tortillas
2 cups Masa Harina
1/2 tsp salt
1 1/2 cups warm water
1. Add 2 cups Masa Harina and 1/2 tsp salt to a mixing bowl. Add 1 cup of the warm water and stir until the water is absorbed.
2. Add the rest of the water incrementally until the flour melds into dough. Use your hands to knead the dough into a cohesive ball
3. Separate the dough into golf ball size balls
4. Now follow along from step 7 from flour tortillas above :)
